Peach or Berry Cobbler
I have made this for many years. It was given by a friend who said NOT to open the oven door before the 25 minutes were up. Never have and it's always a hit!
1 qt. berries or peaches
2 cups sugar
1 cup all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 cup milk
2 Tbsp. butter, melted
1 stick (1/2 cup) margarine
Preheat oven to 325.
Add 1 cup sugar to berries that have been rinsed and drained or fresh sliced peaches. Stir and let stand to make juice.
To make the batter, sift flour, 1 cup sugar, baking powder, and salt. Add milk and 2 tablespoons melted butter. Mix well.
Put the stick of margarine in a large (13x9-inch) baking dish. Put in the oven and let the margarine get real hot, but no scorching. Pour batter over melted margarine, but do not stir. Pour fruit with juice in dish with batter. Do not stir.
Bake for 25 minutes.
Editor's note:
Baking temperature and/or time is in question.
Alternate recipe:
Fruit Cobbler (batter on bottom)

Here's my grandmother's cobbler recipe. I don't think it's particularly unusual -- I've seen close variations of it recently. However, her recipe is extremely sweet; I cut the amount of sugar to about 3/4-cup.
1 stick (1/2 cup) oleo (margarine)
2 cups sugar, divided
1 cup flour
1 Tbsp. baking powder
1/4 tsp. salt
Vanilla to taste
3/4 cup sweet milk (plain ol' ordinary milk)
3 cups fruit
Cut oleo in pieces and place in baking dish.
Sift dry ingredients; stir in milk and vanilla. Pour batter over pieces of oleo. Add fruit on top of batter. Pour remaining 1-cup sugar on top of fruit.
Bake at 350-F for 45 minutes, or until crust rises to the top and is very brown.
GLAZE
Mix together 1/2-cup sweet milk and 1/2-cup sugar. (Again, this is extremely sweet, I use about 1/4-cup of sugar.) Pour glaze over baked cobbler. Place cobbler in oven and let it come to a boil.
