Recipe: Peanut Butter and Jelly Soup (using Jalapeno Jelly)

Peanut Butter and Jelly Soup

This is for 4 - double to 8

1/3 cup celery (finely chopped)
1/3 cup scallions (finely chopped including green tops)
4 tbsp butter or margarine
2 tbsp flour
3 cups chicken stock (ho-made if possible)
1 (13 oz) can evaporated or half and half
3/4 cup smooth peanut butter
1 cup jalapeno jelly (good and hot)
salt and white pepper to taste

Saute the celery and onions until limp, but not brown in the butter. Sprinkle the flour over and blend smoothly. Add the chicken broth, stirring constantly. Beat in the peanut butter using a wire whisk, harmonizing 'til everything is very smooth. Season to taste. Add the Milk or half and half. Place a heaping tablespoon of the Jelly in the center of hand-painted bowls, the prettiest you can find, and ladle the hot soup in around it.
