Recipe: Pineapple Fluff Cake

Pineapple Fluff Cake

6 egg yolks
1 1/2 cups sugar
1 tablespoon lemon juice
1/2 cup unsweetened pineapple juice
1 1/2 cups cake flour
1 teaspoon baking powder
6 egg whites
1/4 teaspoon salt

Beat the egg yolks; add 3/4 cup sugar and beat until thick. Stir in lemon juice and pineapple juice and mix thoroughly. Sift flour and baking soda and add to egg yolk mixture. Beat salt and egg whites until fluffy. Add 3/4 cup sugar and beat until stiff. Fold egg white mixture smoothly into egg yolk mixture. Pour into a 10-inch tube pan and bake at 350 degrees F for one hour. Invert pan to cool.

Suggestion: Frost with whipped cream and garnish with maraschino cherry halves.
