Recipe: Pumpkin French Toast
Breakfast and Brunch PUMPKIN FRENCH TOAST
Covers about 8 bread slices
2 eggs
1/4 cup mashed cooked pumpkin
1/2 cup canned skim milk
1 1/2 tsp ground cinnamon
1 tsp nutmeg
1 tb brown sugar
Pour all ingredients in processor. Mix until well blended. Pour the mixture into a bowl. Dip the bread slices into the pumpkin mixture & fry into a hot griddle or frying pan, greased with margarine or PAM.
