Recipe: Pumpkin Walnut Cookies

Hi Rachel, Here is a recipe I got from a friend, haven't tried it yet but plan to.

Pumpkin Walnut Cookies

1/2 cup margarine
1-1/2 cups brown sugar
2 lg. eggs
1 cup canned pumpkin
1 tsp. vanilla
1 tsp. grated lemon peel
1 tsp. lemon juice
2- 1/2 cups sifted flour
3 tsp. baking powder
1 tsp. salt
1- 1/2 tsp. pumpkin pie spice
1/4 tsp. ginger
1 cup chopped nuts

Cream margarine and sugar together untill fluffy. Beat in eggs, 1 at a time. Stir in pumpkin, vanilla and lemon. Resift flour with baking powder, salt and spices. Blend into margarine mixture. Add nuts. Drop by tablespoons onto greased baking sheet 2" apart . Bake at 375 for 12-14 minutes. yeilds 2- 1/2 doz. cookies
