G'day Sarah, Glad to hear your friend is on the improve, this is certainly wonderful news. Give her a big hug from all down here in Oz. Read with interest your trifle. Here in Australia we also add Jelly (jello)and fruit. Your choice of flavours. Just do as you did with the custard, in layers, when the jelly is almost set, add some fruit, either canned or fresh (peaches and strawberries are the most popular) to the jelly layer, allow to set, then add another layer of custard and then more cake soaked in sherry. It takes longer to prepare, but is sure worth the time taken. We also never eat it without plenty of whipped cream. Made in a clear bowl, with all the different colours, it looks very festive indeed. PS. You can also add some of those pretty red crystalised cherries for extra colour.
