I love this frosting and carrot cake! You could even use non-fat cream cheese to reduce the fat further.
Cream Cheese Icing:
2 teaspoons light butter (do
not soften)
6 ounces Neufchatel cheese
(do not soften)
3 3/4 cups sifted posdered sugar
(I just add to taste)
3/4 teaspoon vanilla extract
