Salad for Mars
Curried Fruit & Nut Lentil Salad w/Cilantro & Red Onions

1/2 lb. lentils, cooked, drained
3 celery stalks, chopped
2 medium red apples, finely chopped
1/4 cup red onions, finely chopped
6 oz. sliced almonds
1/2 cup apple cider vinegar
3 Tbsp. fresh cilantro, coarsely chopped
3 Tbsp. curry powder
Kosher salt
Freshlt ground black pepper to taste

Thoroughly combine all ingredients in a tightly lidded large bowl. For optimal flavor, refrigerate 1 hr or more before serving.

This was a great light salad for picnicing! We ate it while Mars rose on the horizon. It gave us plenty of energy for standing in line to see the Red Planet through the high-powered telescopes.

Everyone should take the time to see the marvelous spectacle and taste the healthy treat!

I suggest a Dry Chablis or Kabinett Riesling
