This is a favorite of my family and friends, but it may seem a little tame compared to some that you have received. It is from Jean Pare's "Company's Coming: Appetizers". 1 19oz. can tomatoes, chopped; 1 large green pepper, chopped; 1 large onion, chopped; 2 cloves garlic, crushed; 4 slices bottled jalapeno pepper, minced; salt. Combine in saucepan and cook over med. heat until flovours are well blended and vegetables are soft, about 45 min. to 1 hour. Let cool and serve with nacho chips and cheese if you like.
A few notes: I always use more garlic and jalapeno peppers, but you can decide. Make sure you wear gloves when chopping the jalapenos. The recipe calls for the mixture to be pureed after cooking, but I like the chunky texture. Enjoy.
