CURRIED PORK WITH RICE
1 lb. stir-fry pork strips
5 tablespoons butter or margarine, divided use
2 cups chopped onions
1 large apple, cored and thinly sliced
1 1/2 cups apple juice
1 tablespoon cornstarch
1 1/2 teaspoons curry powder
1 teaspoon salt
2 tablespoons sweet pickle relish
Hot cooked rice (for serving)
1/2 cup coarsely chopped peanuts (for garnish)
Heat wok, skillet, or electric frying pan to 350 degrees F for about 5 minutes or until hot. Melt 4 tablespoons butter in skillet. Add pork and stir-fry for 5 minutes. Remove pork from skillet.
Reduce heat to medium-low. Melt remaining butter in skillet. Add onion and stir-fry for 3 minutes.
Add apple and stir-fry for 2 minutes.
Combine apple juice, cornstarch, curry powder, and salt in small bowl. Stir to blend. Stir cornstarch mixture into skillet. Cook, stirring constantly, until mixture boils and thickens, about 2 minutes.
Stir in pork and pickle relish. Reduce heat to low. Cover and simmer for 5 minutes.
Serve over hot cooked rice and sprinkle with peanuts.
