Recipe(tried): Savory Butternut Squash Casserole

I found my recipe. I'm posting it in case others might like to try it.

Butternut Casserole
Serves 6 as side dish

3 1/2 lbs. butternut squash
1 large red bell pepper, cut into 1 inch pieces
3 Tbsp. olive oil
2 large garlic cloves, minced
2 1/2 Tbsp. minced fresh parsley leaves
1 Tsp. minced fresh rosemary leaves
salt and black pepper to taste
1/2 cup freshly grated Parmesan cheese

Preheat oven to 400 F.

Cut squash into 2-inch thick slices. Cut away peel, remove seeds, then cut into 1-inch cubes.

Mix together squash, bell pepper, oil, garlic, herbs, salt and black pepper.

Place in a 2-1/2 quart shallow baking dish. Cover with Parmesan.

Bake in middle of oven until tender and top is golden (this takes about an hour).
