Savory Green Beans
1 1/2 pounds fresh green beans
2 tablespoons olive or vegetable oil
1 tablespoon vinegar
1 small onion, chopped
1 clove garlic, crushed
salt and pepper to taste
1/2 cup dry bread crumbs
3 tablespoons butter, melted
3 tablespoons grated parmesan cheese
3 slices bacon, cooked and crumbled
Clean, string, cut into 2" pieces and boil green beans until almost tender. Toss with oil, vinegar, onion, garlic, salt and pepper. Mix together bread crumbs, butter, cheese, and bacon. Put bean mix in a casserole dish. Top with bread crumb mixture. Bake uncovered at 350 F until bread crumbs are golden brown, about 15 to 20 minutes.
