Recipe: Seafood Burgers (using canned salmon)

SEAFOOD BURGERS

2 cans (6 oz each) skinless, boneless canned salmon,* drained
1/2 cup dry bread crumbs
4 green onions, finely chopped
1/4 cup reduced-fat mayonnaise
4 egg whites, beaten
1 tablespoon lemon juice
1 tablespoon minced parsley
1 1/4 teaspoons seafood seasoning
8 hamburger buns (for serving)

Place salmon in a large bowl, and separate chunks using a fork. Add the remaining ingredients (except the buns) and mix well. Shape into eight patties.

Grill or pan-fry burgers until brown, about 3 minutes on each side.

Serve on buns.

*You can use tuna or cod in place of the salmon.
