Recipe: Chicken in Tomato Mayonnaise Triangles

CHICKEN IN TOMATO MAYONNAISE TRIANGLES 

2 tbsp mayonnaise 
2 tbsp tomato ketchup 
125g cooked chicken, finely chopped 
25g lettuce, shredded 
softenend butter for spreading 
3 large slices white bread with the crusts cut off 
3 large slices brown bread with the crusts cut off 

Mix the mayonnaise and ketchup then stir in the chicken and lettuce. 

Make 3 sandwiches using a slice of white and a slice of brown bread for each sandwich to add variety to the plate. Cut each sandwich into 8 small triangles and serve straight away.
