Slieve na mBan Carrots

The ruddy crest of Slieve na mBan (The Mountain of the Women) rising above its stole of milk-white mist gives its name to this dish of cream-wreathed carrots

12 young carrots
3 tablespoons butter
1/2 cup milk
Salt and pepper to taste
1/2 cup heavy cream
2 egg yolks
1 teaspoon finely chopped parsley

Half carrots lengthwise. Melt butter over moderate heat, add milk, season with salt and pepper, add carrots, and cook gently until tender. Remove from heat, stir in cream and beaten egg yolks, and reheat but do not boil, stirring until eggs thicken. Correct seasoning and add parsley. Makes 4 servings.
