Kohlrabi in Brown Sauce
1 medium yellow kohlrabi (about 3 pounds)
1/2 teaspoon salt
2 Tablespoons margarine or lard
1 heaping Tablspoon floor
1 teaspoon sugar
Wash and peel kohlrabi. Cut into 1 inch cubes. Place in a 3 quart pot. Fill with water to cover and add salt. Cover and cook for 15 minutes or until tender. Drain, saving liquid.
Place margarine in frying pan. Add flour and sugar and stir until well blended and nicely browned.
Add about a cupful of reserved kohlrabi cooking liquid and simmer until thick. If too thick, add a bit more of the cooking liquid.
When the right consistencey, add the cubed kohlrabi and simmer for about 5 minutes.
Very good served with boiled beef.
