SOUTHERN FRIED CHICKEN
1 whole chicken, cut up
buttermilk
1 1/2 cups flour
salt and pepper
dash of cayenne pepper
2 eggs
1/4 cup milk
oil for frying
Wash and pat chicken dry then poke each piece with a fork several times. Put chicken in a large bowl. Pour buttermilk to cover. Marinate in fridge overnight.
Add salt and both peppers to flour and put in a shallow bowl.
Mix milk and eggs and beat well in a separate bowl.
Remove chicken from buttermilk and roll in the flour, then the egg wash, then the flour again. Discard buttermilk mixture.
Heat oil in a large skillet. Place floured chicken pieces in the hot oil leaving plenty of room around each piece. Fry in multiple batches if necessary.
Fry until light golden brown on the side then turn chicken. Fry until golden brown all over. Drain on paper towels.
