SPANISH BAR CAKE
4 cups water
2 cups raisins
1 cup shortening
2 cups sugar
2 tsp. baking soda
4 cups flour
1 tsp. ground cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1/2 tsp. salt
2 eggs, beaten
1 cup nuts
Add water to raisins and boil 10 minutes. Add shorten-
ing and allow to cool. Sift together sugar, soda, flour,
spices and salt and add nuts. To dry ingredients, add cooled raisin mixture and blend well. Add beaten eggs and stir well.
Bake at 350 degrees in two 10 x 13-inch pans for 35 minutes.
Frost if desired with powdered sugar icing.

Spanish Bar Cake with Nutmeg Icing
3 cups seedless raisins (15 oz.)
3 cups water
2 1/2 - 2 3/4 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. cinnamon
1 tsp. nutmeg
1/2 cup oleo or butter, soft
2 eggs
1 1/2 cups white sugar
Cover raisins and cook 20 minutes. Simmer after they start to boil. Drain. Keep 1 cup liquid. Cool raisins and liquid well, add raisins to cream mixture after eggs. Add dry ingredients plus liquid. Bake in 9x13-inch loaf pan at 350 degrees for 60 to 70 minutes.
NUTMEG ICING
2 cups powdered sugar
2 tbsp. margarine, melted
1 tsp. vanilla
Dash nutmeg
2 tbsp. light cream
Combine icing ingredient and spread on cooled cake.

Spanish Cheesecake
(10 servings)
CHEESECAKE:
1 lb Cream Cheese
2 Eggs; Large
1 ts Lemon Rind; Grated
1/2 ts Salt
3 tb Butter
1 1/2 c Sugar; Granulated
1/2 ts Cinnamon; Ground
1/4 c Unbleached Flour
1 Confectioners' Sugar
Preheat the oven to 400 degrees F. In a large mixing bowl, cream the cheese, 1 tb of the butter and the sugar. Do not beat. Stir in the eggs, one at a time, beating well after each addition. Add the cinnamon, lemon rind, flour, and salt; blend well. Butter the pan with the remaining 2 tb of butter, using your fingers to spread the butter completely. Pour the mixture into the prepared pan and bake for 12 minutes at 400 degrees, then reduce the temperature to 350 degrees and bake for another 25 to 30 minutes. The knife should come out clean. Cool the cake to room temperature, then sprinkle with confectioners' sugar.

SPANISH COFFEE CAKE
2 1/2 c. flour
1 c. brown sugar
3/4 c. white sugar
1 tsp. cinnamon
1 tsp. salt
3/4 c. Crisco oil
1 tsp. soda
1 tsp. baking powder
1 c. milk
1 egg, beaten
1/2 c. nuts
Mix flour, sugars, cinnamon, salt and oil together. Save 1/2 cup of this mixture for top, then mix soda, baking powder, milk and egg. Sprinkle nuts on top with half cup of mixture saved. Bake in 9x13 inch pan at 350 degrees for 30 minutes.

2 1/2 c. flour

Cream sugar and shortening. Add eggs, mixing well. Add molasses. Add the dry ingredients alternately with sour cream. Bake in loaf pan at 375 degrees F.
