Recipe: Spicy Okra with Basmati Rice and Black Beans

SPICY OKRA WITH BASMATI RICE AND BLACK BEANS

2 cups fresh tomatoes; chopped
1/2 cup onions; chopped
1 tsp hot sesame oil
1 cup okra; sliced
1 tsp garlic; chopped
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/2 vegetable bouillon cube
TO SERVE:
2 cups white basmati rice, cooked
1 cup canned black beans, drained

In a medium size saucepan saute the tomatoes and onions in the oil for 5 minutes.

Add the okra, garlic, salt, pepper, and bouillon cube. Cook for 15 to 20 minutes.

Serve hot over the rice and beans or brown rice.
