Recipe: Spicy Peanut Noodles (using Ramen noodles)

Spicy Peanut Noodles

Sauce:
1 Tbsp Vietnamese fish sauce
1 tsp sugar
1 crushed red hot pepper (no seeds)
1 Tbsp regular soy sauce
1 Tbsp chicken broth
1 Tbsp peanut butter (reduced or low fat work well)

1 package cooked unflavored ramen noodles, or a fistful of spaghetti, spaghettini, angel hair, etc.
julienne scallions (green part)
carrots
crushed toasted peanuts
a few drops of dark sesame oil

Combine the first six ingredients to make the sauce. Sauce ingredients can be adjusted to taste. More crushed red pepper can be added, or the chicken broth can be removed.

Mix the sauce with the cooked Ramen noodles or pasta.

Garnish with the scallions, carrots, peanuts, and sesame oil.

Note: Can be served hot, cold, or room temperature.
