Recipe: Spicy Vegetarian Sandwich

Spicy Vegetarian Sandwich

Serves 4

8 slices best-quality whole grain bread (I like wheat berry or Dakota wheat)
6 ounces cream cheese, softened
1 Tbsp. (or more) horseradish
1 English thin skin hot house cucumber
4 oz. Monterey pepper jack cheese, thinly sliced
alfalfa sprouts (optional)
sliced tomato (optional)

Mash softened cream cheese and horseradish together thoroughly, set aside.

Do not peel the English cucumber. Slice very thin. If you use an entire cucumber you will probably have extra slices left over to munch on while you make the sandwiches!

Spread all 8 slices of bread with equal amounts of the cream cheese/horseradish mixture.
Top 4 of the bread slices with cucumber slices,
1/2 of the pepper jack cheese,
and if you like some thinly sliced tomato and/or alfalfa sprouts.
Top with other four slices of bread.
