Recipe: Cranberry Onion Confit

Cranberry Onion Confit

I always serve this with cold smoked turkey and small rolls. It is delicious.

3 large red onions, sliced
1/4 cup olive oil
1 tsp. dried crushed red pepper
1 cup packed brown sugar
3/4 cup cider vinegar
1/2 cup dry sherry
1 Tbs. grated fresh ginger
8 oz. dried cranberries

Heat oil in heavy large sauce pan. Add onions and red pepper, cook slowly until onions are tender and just starting to brown. Add brown sugar, vinegar, sherry and ginger. Cook until onions are very tender and mixture is thick, stirring often, about 20 minutes. Add cranberries and continue cooking for another 20 minutes. Season with salt and freshly ground black pepper. Cool to room temperature. Serve with smoked turkey.
