Recipe: Spud Nuts and Coffee or Cocoa Frosting

Here is my recipe for Spud Nuts that I got from my sister when she owned her resturant;
1 pkg. yeast
1/2 cup warm water
2 cups milk, scalded
1 tsp. salt
1/2 cup sugar
2/3 cup shortening
6 to 7 cups flour
1 cup potatoes mashed (I use refrigerated leftovers from the night before)
2 eggs
Dissolve yeast in the warm water; set aside.
Combine scaled milk, salt, sugar, and shortening; cool to lukewarm. Add dissolved yeast. Add just enough flour to make a nice dough; mix dough until well blended. Let rise covered in warm place for 1 hour.
Roll dough out and cut into shapes with doughnut cutter. Let doughnuts rise again until double in size.
Fry until golden brown in electric skillet or or in a fry daddy. Do not cook on to high a heat or they will be brown on the outside but doughy on the inside.
Frosting for Spud Nuts
Combine in a saucepan:
1 cup cream
1 cup brown sugar
Boil mixture until it reaches the softball stage.
You can then add either:
2 Tbsp. coffee
OR
2 Tbsp. cocoa
Blend until smooth then frost your Spud Nuts.
