Recipe(tried): Sri Lanken Curry Fish or Chicken

I have a book at home which is great for spicy food, and got this recipe from there. I made it at the weekend and it really is very spicy :) It was a Sri Lanken fish curry but the base is fairly universal in that you could probably use it for everything; veg, fish and all types of meat. Change the stock cube accordingly. Ok, here it is and i really hope that you both like it! Tip:- Freeze your ginger before peeling and grating it; it makes the job alot easier! Be sure to wrap it well though so it doesn't get freezer burn and impair the flavour. Turmeric stains very badly so take care!!!

Sri Lanken Curry Fish or Chicken
Serves 4

1 chicken stock cube
300 ml coconut milk
2 cloves of garlic
1 onion
2 tomatoes of 1 beefsteak tomato
2 tsp fresh grated ginger
3-4 tsp curry powder
1/2- 1 tsp chili powder
1 tsp turmeric
1 tsp salt
2-3 tbsp oil
4 skinless, boneless chicken breasts
1 tbsp lemon juice and a little grated rind

Mix the salt and turmeric together and place in a ziplock bag with the chicken. Shake to coat thoroughly.

Peel and roughly cube the onion. Peel the garlic. Blanch the tomatoes and remove then discard the skins. Quarter the tomatoes. Grate the ginger. Add all these ingredients to a blender and process until a smooth paste is achieved.

Add 1 tbsp of the oil to a pan and fry the chicken until it is golden brown. Set aside. Add the remaining oil to the pan and then the paste. Fry gently until the paste starts to seperate and a lovely aroma is realeased! This should take 2 or 3 minutes. Add the curry and chili powders and fry for a few minutes more. Crumble over the stock cube and add the coconut milk. Add the Chicken and heat through.

Simmer gently for 30 mins or so. add the lemon juice at the end, a few minutes before serving. Add the lemon juice at the end, a few minutes before serving.

This tastes even better if eaten the next day as it gives the spices time to mature. Serve sprinkled with a little fresh coriander and Basmati Rice and naan bread! Yum!
