Recipe: Stir-Fried Chicken Fillet with XO Sauce

No, I haven't forgotten, just real busy this week. Again it's in Australian measurements with American in brackets

STIR-FRIED CHICKEN FILLET WITH XO SAUCE

250g(9oz) chicken fillet, sliced
100g(3 1/2oz) asparagus
20g(3/4oz) diced red capsicum(bell pepper)
1tsp minced garlic
1/4cup Lee Kum Kee XO sauce
1 1/2tbsps(2tbsps) oyster sauce
1tsp sesame oil
1/2tsp cornflour(cornstarch)

Combine oyster sauce, sesame oil & cornflour, add chicken & marinate 30mins. Stir-fry till almost done then set aside. Cut tender part of asparagus into slanted sections. Parboil, rinse in cold water & drain. Heat 1tbsp oil & saute garlic & capsicum. Add chicken & stir-fry till cooked. Remove. Stir-fry asparagus with XO sauce. Replace chicken & stir-fry till hot.

Serves 4 in a banquet.
