Oh YUM! This is one of my favorite apple recipes. I make tons of this.

Strawberry Applesauce

1 5-pound bag of tart apples, peeled, cored, and chopped
1/4 cup bottled apple juice
2 quarts (8 cups) strawberries, washed, hulled and crushed
2 cups sugar
After peeling, coring and chopping the apples toss with the bottled lemon juice in a large, non-reactive pot. Add the crushed strawberries and sugar; mix very well.
Bring the mixture to a simmer over medium heat, stirring often to prevent sticking. Simmer for about 30 minutes or until the apple pieces break down, remembering to stir often.
Ladle into prepared jars, allowing 1/4 inch headspace. Seal. Process half-pints for 15 minutes, pints for 20 minutes, in boiling water bath at 200 degrees F. Yield approximately 4 pints
Note: The strawberry seeds will remain since the processing times are not long enough to dissolve them completely.
