Freezing Apples
Source: UCD El Dorado Master Food Preservers

Select apples with the following characteristics: firm-ripe; not mealy; skin tight; bright and free from spots; firm; greenish-white; distinctive flavor.

Preparation of apples for pies or other cooked dishes:

Wash, peel and core. Slice directly into a solution of 3 tablespoons of lemon juice or 3 tablespoons salt to 1-gallon water. Never allow slices to remain in solution more than two to three minutes. Place slices on a tray covered with several layers of paper toweling. Place tray in refrigerator to drain. Pack in cartons and freezer bags. Seal, date and freeze. (If desired, add one part sugar to 4 parts apples.)
