Recipe: Chunky Applesauce

This recipe comes from "American Country Living Canning & Preserving".

Chunky Applesauce
Makes 5 pints

24 large apples
1/2 cup water
2 Tbsp. bottled lemon juice
1/2 to 1 1/2 cup sugar
3 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla

Peel, core & thinly slice apples. Put apples into a large saucepan with water & lemon juice. Cook, covered till tender, about 20-25 minutes, stirring occasionally. When apples are tender, chop coarsely with a metal spoon. Add sugar, cinnamon, nutmeg & vanilla & continue to cook till sugar dissolves. Spoon hot mixture into hot jars, to within 1/2 inch of top, release air bubbles, clean rims,& seal. Process in a water bath canner for 20 minutes for pints & 30 minutes for quarts.
