About a week ago, someone asked for strawberry jam with bourbon or some other liquor or liqueur. I can't figure out how to find the original request. Anyway, I thought this recipe might at least give the right proportions, and it sounds wonderful, with a little orange flavor to the strawberry.
Strawberry Jam with Triple Sec Liqueur
4 cups chopped fresh or frozen unsweetened strawberries
2 T. lemon juice
1-1/2 pkgs. powdered pectin
8 cups sugar
1/3 c. triple sec liqueur
Put the strawberries and lemon juice in a large, nonreactive pot. Bring to a boil. Add the pectin. Return to the boil. Add the sugar slowly, stirring constantly. Bring to the boil again and boil for 1 minute, or until the jam sheets off the spoon. When ready, add the triple sec and bring to the boil once more. Pour into hot, sterilized jars. Cover with new, clean, hot lids. Invert
for 5 minutes.* Store in a cool place. Makes 8 to 9 -- 8-oz. jars.
* May want to check with extension office for boiling bath instructions.
