"WWII" Stuffed Frankfurters

4-5 servings

1 slice bacon, cut in pieces
1/3 cup finely cut celery
1/3 cup minced onion
1/4 cup water
2 cups cubed soft bread
1/3 cup chopped sweet pickles
1 teaspoon salt
1/2 teaspoon dry mustard
10 frankfurters, split lengthwise(be careful not to cut lower skin)

Heat oven to 350 degrees
Saute bacon slowly until crisp. Remove from skillet. Simmer celery, onion and water over low heat 10 minutes in same skillet (covered). Remove from heat. Stir in bread, pickles, salt, mustard and crisp bacon. Pack stuffing into frankfurters. Insert toothpicks crosswise to prevent spreading. Place in shallow baking dish stuffing side up. Add water until it just covers bottom of dish. Bake 30 mins.
