Recipe: Cream Cheese Rhubarb Delight

Cream Cheese Rhubarb Delight
Serves 6

1 cup flour
1/2 cup powdered sugar
1/2 cup butter

Mix together with pastry blender and press in bottom and up sides of 9"
pie plate. Bake in preheated 350 F. oven for 10 minutes. Remove and
cool.

FILLING
3 cups rhubarb, cut into 1" pieces
2 Tbsp. cornstarch
Pinch of salt
1 1/2 cups sugar, divided
6 oz. cream cheese
1 large egg
2/3 cup sour cream
almonds and maraschino cherries for garnish

1. In 2-quart saucepan over medium heat, cook rhubarb, cornstarch, salt, and 1 cup sugar, stirring often until mixture boils and thickens.

2. Pour rhubarb mixture into crust.

3. In small bowl with mixer at medium speed, beat cream cheese, egg, and 1/2 cup sugar until smooth; pour over rhubarb mixture. Bake for 25-30 minutes until set; cool on wire rack.

4. To serve, spread sour cream on top and garnish with almonds and cherries.
