Stuffed Lollipops

Here is a recipe from a Pillsbury cookie booklet that I have had for
years. I am sure that the cookies can be decorated and filled any way you like.
Makes about 2 dozen
1/2 cup butterscotch morsels
2 cups all-purpose flour
1/2 tsp. double acting baking powder
1/4 tsp. salt
1/2 cup unsalted butter
1/4 cup firmly packed brown sugar
1 egg
1 tsp. vanilla extract
2 dozen Popsicle sticks
Pillsbury cookie decorators (I am sure home-made would be better and cheaper)
Melt morsels over hot water in a double boiler. Cool. Sift flour with baking powder and salt. Cream butter and add brown sugar; cream well. Stir in egg, vanilla, morsels and dry ingredients; blend well. Chill for easier handling.
Roll out dough, half at a time, on a floured surface to 1/8-inch thickness. Cut into rounds with a 2 1/2-inch cookie cutter. (I am sure that any shape could be used). Place half of the rounds on an ungreased cookie sheet. Place popsicle sticks in center of each cookie. Top with a tsp. of filling. Cover with another round; seal edges.
Bake at 375F for 10-12 minutes. Remove to wire rack to cool. Decorate as desired.
Scotch Filling:
Melt 1/2 cup butterscotch morsels over hot water in a double boiler. Stir in 1/4 cup finely chopped raisins and 1/4 cup finely chopped nuts. Cool slightly.
