Stuffing with Bacon

I love stuffing. Everything in this recipe is adjustable to taste and very forgiving. this is an off-the-top-of-my-head recipe, no two are ever the same. I usually make a lot for Thanskgiving, because I can't stop snacking on it before I stuff the bird. It goes something like this:

1 loaf of bread, crusts removed, chopped to cubes
6+ slices bacon, fried, crumbled (reserve grease)
3+ stalks celery, chopped
2 onions, chopped
4+ cloves garlic, minced
water or poultry broth
dried sage, to taste

Fry the celery, onion, and garlic in a few tablespoons of the bacon grease. Add some broth (just a dribble) to let it steam. When everything is tender, mix in the bacon and bread cubes. Add sage to taste (alternately, you can use sage-flavored bread cubes - I like the taste of Pepperidge Farm brand.) To the pan, add a few more dribbles of broth until the stuff is slightly moist - not
mushy, remember that it will pick up juices from the bird, too. Pack it into the bird and you're off.
