Recipe: Sugarless Plum Jam, Diet Strawberry Freezer Jam with Pectin

Sugarless Plum Jam

2 pounds Italian plums, pitted and chopped
1 (6-ounce) can frozen apple juice concentrate

In a saucepan, combine plums and apple juice concentrate. Cook uncovered over moderate heat until thick, about 1 hour.

Ladle into hot, sterilized jars and seal. Keep in the refrigerator up to 3 months.

Makes 4 cups.

You can freeze it,too. Low sugar and sugar free jams will not keep nearly as long in the fridge as those with sugar.

DIET STRAWBERRY FREEZER JAM WITH PECTIN

1 quart cleaned strawberries
3 to 4 teaspoons liquid artificial sweetener
1 package powdered pectin
1 tablespoon lemon juice
Red food coloring as desired

Crush strawberries in 1 1/2 quart saucepan. Stir in
artificial sweetener, food coloring, powdered pectin and
lemon juice. Bring to a boil and boil 1 minute. Remove from heat. Continue to stir 2 minutes. Pour into freezer
containers, cover and freeze. Thaw before serving. Store in refrigerator up to 4 weeks after opening.

Yield: about 2 2/3 cups. 1 tablespoon = 5 calories.
