SWEET AND SOUR ZUCCHINI
1 1/2 tablespoons chopped onions
1 cup white wine vinegar
1/2 cup chopped green bell peppers
1/2 cup celery, diced
1/2 cup mushrooms, thinly sliced
7 small zucchinis, thinly sliced
1/2 cup honey
1 teaspoon ground black pepper
1/3 cup vegetable oil
1 teaspoon salt
Combine all ingredients in large bowl. Cover and refrigerate overnight.
Drain and serve chilled or at room temperature.
Makes about 2 quarts, 24 servings
