Recipe: Grilled Blackberry Chicken (with blackberry marinade)

GRILLED BLACKBERRY CHICKEN

1 (4 ounce) boneless chicken breasts
FOR THE MARINADE:
1 lb blackberries, fresh or frozen
1 cup red wine vinegar
1/2 cup olive oil
2 bay leaves
1 teaspoon crushed thyme leaves
Salt and Pepper to taste

Combine berries with vinegar in a microwaveable dish and raise to a boil in the microwave (about 1 minute full power). Remove and let the berries steep about an hour.

Strain the berries, mash them to remove the juice. Add olive oil, bay leaves and thyme to juice. Divide the juice in half and refrigerate one part in a covered jar. Rub the remaining marinade on the chicken, then cover and refrigerate overnight.

WHEN READY TO COOK:
About 45 minutes before serving, preheat grill.

Remove the chicken from the refrigerator and discard marinade. Pat the chicken dry and season to taste with salt and pepper.*

Grill until golden brown and done turning frequently and basting with the marinade saved in the jar.

*Chicken can be first microwaved a minute or two before beginning the barbecue.
