Recipe: Three Bean Potluck Casserole and Three Bean Turkey Burger Bake for Cathy

Servings: 4 to 6
1/2 pound bacon
1 pound ground beef
1 onion, chopped
1 (16 ounce) can baked beans
1 (15.25 ounce) can kidney beans
1 (15 ounce) can butter beans
3/4 cup brown sugar
1/2 cup ketchup
1 tablespoon vinegar
1 teaspoon dry mustard
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, break into medium pieces and set aside.
In same skillet, brown beef and onion. Drain fat.
Preheat oven to 350 degrees F (175 degrees C).
Place bacon/beef mixture in a large bowl and stir in the remaining ingredients; mix well. Spoon mixture into a 9x13 inch baking dish.
Bake in the preheated oven for 1 hour, uncovered.
THREE BEAN TURKEY BURGER BAKE
Makes 6 (1 cup) servings
1 cup chopped onions
2 (16 oz.) can baked style beans, undrained
1 (15 oz.) can red kidney beans, drained
1 (8 oz.) pkg. frozen baby lima beans, cooked and drained
1/2 cup ketchup
1/4 cup firmly packed brown sugar
2 tbsp. molasses
1 tbsp. vinegar
1 tsp. prepared mustard
1 tsp. salt
1/4 tsp. pepper
1 lb. ground turkey
Heat oven to 350 degrees.
In large skillet brown turkey and onions, drain.
Combine all ingredients and mix well. Spoon into a 2 quart casserole.
Bake uncovered at 350 degrees for 35 minutes or until hot and bubbly.
