SALMON WITH WILTED SPINACH AND LEMON YOGURT SAUCE
4 salmon filets (about 1 pound)
3 tablespoons McCormick Limited Edition Kenya Shake It spice blend, divided use (recipe follows)
1 tablespoon honey
1 tablespoon water
1 teaspoon olive oil
1/2 cup plain yogurt
2 tablespoons fresh lemon juice
1 bag (10 oz.) fresh spinach leaves
salt and pepper to taste
Preheat oven to 375 degrees F. Combine 2 tablespoons Kenya Shake It spice blend with honey and water. Rub over salmon and marinate 15 minutes. Place salmon on baking pan and bake 10 minutes or until cooked through.
Whisk yogurt until smooth. Stir in 1 tablespoon Kenya Shake It spice blend and lemon juice. Set aside.
Heat oil in a skillet on medium heat. Add spinach and cook until wilted, about 2 minutes. Season spinach with salt and pepper. Place spinach on a platter. Top with salmon. Serve yogurt sauce.
*Kenya Shake It is a mixture of coriander, cumin, orange and lemon peel, cloves, brown sugar, salt and pepper.
KENYA SHAKE IT SPICE BLEND
Makes about 4 tablespoons

"My Kenya Shake It spice blend adds pizzazz to a variety of dishes," said Szlatenyi, who lives in Wakefield, R.I. "I use it when preparing grilled chicken, rice, meat and vegetarian chili, as well as in cranberry and other fruit sauces."
2 tablespoons ground coriander
2 teaspoons orange peel
1 teaspoon lemon peel
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 teaspoon ground cloves
1 teaspoon light brown sugar
1/2 teaspoon salt
Combine ingredients. (McCormick Gourmet Collection spices recommended.)
USE SUGGESTIONS:
- Use as a rub for grilled chicken - 1 tablespoon blend per one pound
- Stir blend into hot, cooked rice to taste.
- Jazzes up meat and vegetarian chili and casseroles.
- Simmer 1 teaspoon with cranberry or other fruit sauce.
