Recipe: Turkey Split Pea Soup (using turkey ham) (blender or food processor)

Soups
TURKEY SPLIT PEA SOUP

2 quarts turkey or chicken broth
1 package (1 pound) split peas, rinsed
11/z cups chopped onions
1 cup chopped carrots
1/2 cup chopped celery
1 clove garlic, minced
3 tablespoons parsley flakes
1 bay leaf
1 pound turkey ham, cut into 1/2 inch cubes
Salt and pepper (to taste)

Combine broth, split peas, onions, carrots, celery, garlic, parsley and bay leaf in Dutch oven. Bring to a boil over high heat. Reduce heat to low. Cover and simmer 1 hour. Remove bay leaf.

Puree soup, in batches, in blender or food processor for a smooth consistency, or whisk with wire whip for a chunky texture. (The carrots and celery will remain in pieces.)

Return soup mixture to Dutch oven; add turkey. Bring to a boil over medium heat. Reduce heat to low. Simmer, uncovered, 10 to 15 minutes. Season to taste with salt and pepper.

Makes 6 serving
