Dear Gladys, Here's our favorite custard pie - very basic but real comfort food. I remember copying this recipe from a cookbook at my Aunt's farmhouse when I was a teenager (unfortunately I don't remember the name of the cookbook). My Aunt and her farm are long gone but making this recipe always brings me back to that cozy kitchen.
VANILLA CUSTARD PIE
1 (9-inch) pie shell (unbaked)
2 2/3 cups milk, scalded to 180 degrees F (5-7 minutes in microwave)
4 eggs (I've used 2 eggs plus 1/2 cup Eggbeaters with success)
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
Ground nutmeg for sprinkling (freshly ground if you can)
Preheat oven to 425 degrees F.
Beat together eggs, sugar, salt and vanilla.
Slowly stir into scalded milk (stir a little of the milk into the egg mixture to warm it first).
Pour into pie crust. Sprinkle with nutmeg.
Bake 15 minutes at 425 degrees F. Reduce oven to 350 degrees F and bake about 35 minutes longer or until knife inserted off-center comes out clean.
