You are going to be a busy lady come May. I agree with you that it is a labor of love. The ham/asparagus rollups (recipe below) are just about everyone's favorite--even those who think they don't like asparagus. I found some garlic marinated mushrooms at our local grocery (Winn-Dixie). They are fantastic.

Also, in the archives there is a recipe from TerryTx for pimento cheese. It is just wonderful to use in stuffed celery. If you can't find it, let me know and I'll post it for you. Very different.

HAM-ASPARAGUS ROLLUPS (Makes about 25)

1-2 lb. asparagus
1 lb. deli-style ham
1 - 8 oz. pkg. cream cheese, softened
1 tsp. horseradish
Splash of Worcestershire sauce

Clean asparagus and snap off tough ends. Cut each slice of ham in half. Mix cream cheese, horseradish and worcestershire sauce together. Spread a thin layer of cheese mixture on 1/2 slice ham. Place asparagus spear in center and roll up. Refrigerate until ready to serve.
