For Elaine: Welbilt bread recipe from my manufactures book.
2 1/4 tsp. dry yeast
3 cups bread flour
1 1/2 tsp. salt
1 1/2 Tbsp. sugar
1 1/2 /Tbsp. dry skim milk
4 1/2 tsp. shortening or sweet butter
1 1/2 cups LESS 3 Tbsp. lukewarm water
2 1/4 tsp. dry yeast
3 cups bread flour
1 1/2 tsp. salt
1 1/2 Tbsp. sugar
1 1/2 /Tbsp. dry skim milk
4 1/2 tsp. shortening or sweet butter
1 1/2 cups LESS 3 Tbsp. lukewarm water
15 minutes of primary kneading
60 minutes primary rising
18 minutes secondary kneading
20 minutes secondary rising
2 sec loaf shaping
75 minutes final rising
26~50 min Baking
