Breads - Bread MachineOld Fashioned White Bread (West Bend Bread Machine)
Makes one (1 1/2 pound) loaf
Made with milk for a tender crust and a fine texture just like Grandma used to make.
9 oz. warm milk (use whole milk or 2%)
3 cups bread flour
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
2 tablespoons butter or margarine (don't use the 48% water kind)
2 teaspoons active dry yeast (or 1 1/2 teaspoons 'bread machine' fast rise yeast)
Program for Basic/Specialty and desired Bread color (choose the middle crust/color setting!) The program takes 3 1/2 hours, so give yourself some time if you want fresh bread for supper.
Add liquid ingredients first to bread pan, then the dry ingredients. Butter or margarine should be at room temp.
When done, turn off bread maker by unplugging it, remove bread 'pan' and place up-side down on a cooling rack. Bread MUST set about 15 minutes before slicing to cool, otherwise it will be dry after your slice it, as the heat from the hot bread will evaporate the moisture out of the bread and it will be "tough". Remove bread from pan right away, however, as the moisture will make the crust chewy instead of crisp if you don't. Let the bread cool down out of the pan. Don't forget to retrieve the white nylon stirring tool which will now be either in the bottom of your bread pan or imbedded in the bottom of your bread.
Pizza Dough (West Bend Bread Machine)
Makes enough dough for one 12x 15 inch pizza
Double formula for two pizzas, which is what you will need because this is one of the best pizzas you will ever make. Especially good for a girl teen sleepover. Two pizzas will feed 8 teens, as these are so good they never stop eating until it is gone. Lightly spray 'Pam' or another light oil onto your cookie sheet to prevent sticking. Use different ingredients and make half and half pizzas and they will love it!
6 oz. warm water
2 tablespoons vegetable oil
2 cups all purpose or bread flour
1/2 teaspoon sugar
1/2 teaspoon salt
2 teaspoons active dry yeast (or bread machine fast rise yeast)
1 (9 oz.) can tomato sauce (pizza sauce is better if available, or use the tomato sauce and sprinkle it with spices, etc.)
ingredients to place on top of the pizza
shredded mozzarella cheese
Add liquids to pan first, then dry measures.
Set Machine for DOUGH program. When done, place dough onto a lightly floured surface with a towel over it to keep in the warmth to let it rise for about 20 -25 minutes.
Then place the dough onto a cookie pan that was lightly sprayed and lightly floured and slowly work the dough into a thin layer all over the bottom of each pan with just a little thicker crust at the edges. (You may roll out the dough on a flat surface first if you choose).
Spread the pizza sauce evenly over the crust, then top with your favorite meats and other pizza toppings. Then the shredded cheese goes on top.
Bake in a preheated oven at 425 degrees F for 20 -25 minutes, checking the crust with a spatula to make sure it is golden brown and not uncooked or burnt. The cheese should be nicely browned on top, also. Let cool a few minutes before cutting with a pizza cutter. The kids will love it.
I hope that the past year has been a healthy and successful one for you, your family, and your business endeavors.
Sincerely,
William Wehrle
