How absolutely wonderful! And you must be so proud! Protein is almost NEVER a concern since our bodies need far LESS than you'd imagine! And the greatest sources in the world, the purest and finest that are almost an exact match for our bodies are in PLANT form, not animal (see www.celltech.com) I am so thrilled for you and all the doors that this will open for both of you!
I could spend hours and hours over tea with you over all the wonderful cookbooks I've enjoyed over the years, but unfortuneatly, there's no space or time. So, I will tell you one of my favorite websites www.vegsource.com
and introduce you to Deborah, the absolute most wonderful recipe guru! Tell her GinSing sent ya! I will also tell you that the absolute best, most reputable magazine is VEGETARIAN TIMES (see also their website), so subscribe to that and they have the most delicious recipes!
There are no concerns as far as nutrition, in making the vegetarian choice unless it's a matter of an UNEDUCATED choice. In other words, if she chooses french fries, pizza etc and thinks she is doing well, then there's a concern. This will be a wonderful journey for the both of you TOGETHER, even if you don't choose to become vegetarian! You will benefit greatly anyway.
I see the recommendation for Diet for a Small Planet. I haven't read the new edition but the 70's version is not correct and I would recommend others before that. Still, they are correct in that it is BENEFICIAL reading and offers much.
"Diet for a New America", and "Mad Cowboy" are excellent choices as well.
I've always cherished my "Laurel's Kitchen" cookbook, "Vegetarian Times",
"Moosewood", etc. You'll see.
