Yogurt Fruit Pie
Rec.food.recipes/Karen Eileen 1997
1 (3 oz) package fruit-flavored Jell-o
1/2 cup boiling water
2 (8 oz) containers fruit-flavored yogurt. (pre-stirred)
1 (10-12 oz) tub Cool Whip, thawed inside the refrigerator
1 (8 inch) graham cracker pie shell
Dissolve Jell-O in boiling water large mixing bowl. Add yogurt and stir until creamy and smooth. Be sure to allow the mixture to cool completely before adding the Cool Whip or it will lose its fluff. Fold the Cool Whip into the fruit-yogurt mixture just until the whip topping is the same color or marbled into the fruit-yogurt mixture. Please hurry and put into crust!!! It will set up very quickly. Do not stir too much this will also cause the Cool Whip to lose its fluff. Spoon into a graham cracker crust. and freeze until 45 minutes before serving. Let thaw and serve.
If you use the prepared pie shells, they come with a lid that you may turn over and stack several pies inside your freezer compartment. These recipes are very easy just double or triple the recipe above and make 2 or 3 pies OR make 2 or 3 pies from different fruit flavors. Make 3 or 4 pies ahead of time, then freeze them. It takes 30 to 45 minutes for one to thaw out. Keep them frozen only about a week in advance.
