Light'n Fruity Pie

1 (4-serving size) pkg. Jell-o, any flavor
2/3 cup boiling water
1/2 cold water
ice cubes
3 cup Cool Whip, thawed
1 cup diced fresh, frozen or canned fruit
1 (9-inch) graham cracker crumb crust
Completely dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 1/4 cup. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice.
Using wire whisk, blend in whipped topping; then whip until smooth. Fold in fruit and chill until mixture will mound.
Spoon into pie crust. Chill 2 hours.
Garnish with additional fruit, if desired.
