ZUCCHINI PAN ROLLS
1 teaspoon flour
2 teaspoons honey
1/2 cup warm water
1 package yeast
1 cup warm water or milk
3 1/2 cups flour or more if needed
2/3 cup zucchini, grated and drained or patted dry
2 tablespoons oil
1 tsp. salt
poppy or sesame seeds (for topping - optional)
Stir together first 4 ingredients and let proof.
Combine with warm liquid and add all at once to remaining ingredients in a large bowl. Knead dough about 10 minutes adding more flour if necessary to make a soft firm dough. Grease surface of dough and let rise in a warm place until doubled.
Turn out on floured board and knead lightly. Shape into rolls and let rise again about 30 minutes.
Preheat oven to 400 degrees F.
Place rolls in pan on middle rack and immediately lower heat to 375 degrees F. Bake 15-20 minutes.
Tops may be sprayed with salt water and sprinkled with poppy or sesame seeds.
