Recipe: Zucchini Squares

Zucchini Squares

Servings: 6

4 eggs
1/2 cup grated Parmesan cheese
1/2 cup chopped onion
1/2 teaspoon seasoned salt
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup chopped fresh parsley or 2 teaspoons dried
parsley flakes
1/2 cup vegetable oil
1/2 cup whole wheat flour
1 cup biscuit making mix
3 cups grated zucchini

Preheat oven to 375:F. In a large bowl, beat the eggs, add all the remaining ingredients, and mix well. Pour mixture into an ungreased 9-inch square baking pan and bake for 30 to 35 minutes. To brown top, put under preheated broiler for the last 2 or 3 minutes. Cool for a few minutes, then cut into squares.

NOTE: If you have the time, give it a zip with chopped fresh garlic instead of the garlic powder.
