CALIFORNIA-STYLE MIXED VEGETABLES WITH CHEESE SAUCE
1 (2.2 lb) package frozen California-style mixed vegetables (broccoli, cauliflower and carrots mixture)
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 1/2 cups milk
1 cup shredded Cheddar cheese
1 tablespoon Dijon mustard
Salt and pepper, to taste
Cook vegetables in large pot of boiling water or in microwave (without water), until tender crisp. Drain vegetables and keep warm.
In large saucepan, melt butter over medium heat. When bubbly, stir in flour; cook, stirring constantly, for 2 minutes. Gradually stir in milk; continue stirring until mixture thickens and bubbles. Reduce heat and simmer for 1 minute.
Stir in cheese until smooth. Stir in mustard. Season with salt and pepper. Pour cheese sauce over vegetables.
Makes 6 servings
