ISO: Easter menus?

I am having company this weekend and wonder what some of our wonderful cooks here are planning to
serve for their Easter celebration? It is a good
thing that I work well under pressure since I haven't decided on my menu yet! The only thing that I know for sure is that I am making Red Beet Eggs today since none of the family would think that it was Easter without them. We always called them "pickled eggs" and Mom would have to make the recipe 2 or 3 times since we would eat them all before Easter even arrived!
